Аннотация :

       The study guide “Science-based design for foods composition” is recommended for MCs who study master's program “FoodTech” at the faculty of Biotechnology in the training areas such as 19.04.01 "Biotechnology", 19.04.02 "Food from plant raw materials", 19.04.03 "Food of animal origin". This study guide allows the student to understand the methodological principles of designing the composition of multicomponent products, considering the quality indicators of raw materials and finished products. This course will provide an overview of knowledge in food science with focus on active and healthy aging of population. As a result of studying the course students will know how to design a science-based food composition with desirable properties for specialized and functional nutrition.
